Filet Knife

All our filet knife blades are crafted from 5160 spring steel or 1095 depending on if you need more flexibility or higher carbon content. They are always hand forged with a full tang and brass peens. Our blades are also hand sharpened and finished on an 8000 grit whetstone for a razor sharp edge for your cooking needs.
