All our filet knife blades are crafted from 5160 spring steel or 1095 depending on if you need more flexibility or higher carbon content. They are always hand forged with a full tang and brass peens. Our blades are also hand sharpened and finished on an 8000 grit whetstone for a razor sharp edge for your cooking needs. Pick from our standard styles or fill out a custom order form if you wish to customize a special filet knife!
